You need the tartness of the apple to balance the sweet in the coating. Caramel: 1 cup brown sugar 1 stick (4 oz) of unsalted butter 7 ounces sweetened condensed milk 1/2 cup light corn syrup 1 1/2 teaspoons vanilla Chocolate: 8 Ounces bittersweet chocolate (you can use milk if you want a sweeter coating) 8 Ounces white chocolate + food colouring, or coloured chocolate Toppings: Whatever you want, make your own decisions. Directions: To make the caramel heat all the ingredients except the vanilla in a heavy bottom pot until 245 degrees F. Make sure to continuously stir the caramel so it doesn’t burn. Make sure to scrape down the sides of the pot while stirring so all the sugar melts otherwise you will have grains of sugar in your caramel. Once the mix is 245 degrees immediately remove the pot from the heat. We placed the pot in a bowl of cool water to prevent the caramel from cooking and further, but we don’t think it is necessary to be honest and it makes the caramel firm up very quickly. After a min or 2 when the caramel has had a chance to cool, add the vanilla and stir to combine. Dip your apple in the caramel and sprinkle/roll in toppings. We REALLY liked the salted pretzels with the caramel. To make the chocolate coating add the chocolate to a double boiler and heat while stirring the chocolate until it is just melted and glossy. Dip the apple in the chocolate and coat with toppings. Apples that have been coated should be placed on a Silpat or parchment paper to solidify so they do not stick.
